An easy and delicious potato soup inspired by the Van Gogh's work The Potato Eaters.

For the soup:

  • 2 Potatoes (600 g approx.)
  • 1 Onion
  • 2 Carrots
  • 1 Celery stick
  • 1/2 liter Water
  • 1/2 liter Vegetable stock
  • Oil
  • Salt
  • Black pepper

For the toppings:

  • Ham or bacon
  • Spring onion

Elaboración paso a paso

  • Wash, cut and peel vegetables. 
  • Sauté in a pot the chopped onion, sliced carrots and celery.
  • Add the water and the stock and let it boil for 30 minutes. Cook the potatoes steaming. 
  • While it cooks, cut the spring onion and cook the ham in a frying pan.
  • When the potatoes are cook, mash the vegetables with the stock, and add them the boiled potatoes. Add salt and black pepper. 
  • Add the ham and the onion as topping on the soup.
