Potato soup

An easy and delicious potato soup inspired by the Van Gogh's work The Potato Eaters.

For the soup:
- 2 Potatoes (600 g approx.)
- 1 Onion
- 2 Carrots
- 1 Celery stick
- 1/2 liter Water
- 1/2 liter Vegetable stock
- Oil
- Salt
- Black pepper
Wash, cut and peel vegetables.
Sauté in a pot the chopped onion, sliced carrots and celery.
Add the water and the stock and let it boil for 30 minutes. Cook the potatoes steaming.
While it cooks, cut the spring onion and cook the ham in a frying pan.
When the potatoes are cook, mash the vegetables with the stock, and add them the boiled potatoes. Add salt and black pepper.
Add the ham and the onion as topping on the soup.
